Quick breads are no-yeast breads that can be made in a wide variety of sweet and savory flavors. These easy-to-make loaves are not only super-fast to make, as the name implies, but are a lot less finicky than bread made with yeast because you don’t need to be concerned about proofing the yeast (a process whereby you test the yeast ahead of time to make sure it’s active/alive) or whether you have the right climate for your bread to rise properly. Banana bread is by far the most popular in the quick bread category but most recipes you’ll come across call for all-purpose flour and refined sugar. This recipe for Chickpea Chocolate Chip Banana Bread is a bit healthier. It swaps out all-purpose flour for gluten-free, protein and fiber rich chickpea flour, uses coconut sugar in place of a refined sweetener, and throws in some dark chocolate chips to make it even more decadent. I consider crackers a pantry staple but I’m not crazy about most of the choices at the grocery store as many of them contain not-so-healthy ingredients like refined oils, potato starch, and added sugars. That’s why, when I have time, I prefer to make my own and this recipe for Chickpea Parmesan Crackers is probably the one I turn to most. These are hearty, rustic crackers with a firm bite and delicious savory flavor. They’re beautiful on charcuterie boards, taste divine dipped in hummus, and, when broken apart are a fantastic gluten-free substitute for salad croutons. I’m not gonna lie – they’re a little labor intensive to make but are definitely worth the effort!  So, make yourself a cup of tea, put on some music or a podcast, and get to work making these scrumptious crackers. Sweet potatoes are the star in this healthy, colorful, delicious salad, which is why I named it Sweet Potato Kale Salad instead of Kale Sweet Potato Salad. If you’re not accustomed to eating sweet potatoes cold or at room temperature, you’re missing out because they’re fantastic in salads and add a gorgeous pop of color, particularly when set against salad greens. They’re super nutritious too, rich in beta-carotene, potassium, manganese, and lots of other vitamins and minerals. Whenever I make Roasted Maple Balsamic Onions it’s almost always as an accompaniment to grilled beef or pork, but I invariably end up using them “in” and “on” so many other foods. This bread is so delicious and addictive that my husband jokingly calls it “crack”, which is ironic because the first iteration of Gluten-Free Cheesy Ruffle Bread almost ended up in the trash. I was actually trying to develop a pizza crust when I came up with this recipe, but when I pulled the pan out of the oven the so-called “crust” was a bubbly, ruffled mess – not at all suitable for pizza toppings. If it weren’t for the fact that I’m maniacal about food waste I might have tossed it in the garbage, but I figured it was probably edible so I cut it into pieces and served it with dinner that night and much to my surprise, everyone loved it, and I mean REALLY loved it! If I hadn’t already known that one could make delicious tasting brownies with foods like black beans, sweet potatoes, and avocados, I might have been skeptical when I first heard about lentil brownies. After all, lentils are one of the most nutritious foods on the planet. Who would ever think you could use them to make rich and decadent desserts?  But now that I’ve been a food blogger for a few years, I’m quite familiar with how healthy foods can be disguised in baked goods and the magic that happens when, in combination with other nutritious ingredients, they’re transformed into delicious treats – ones far better for us than their classic counterparts. If you don’t believe me, try this little experiment. Whip up a batch of Dark Chocolate Lentil Brownies and serve them to your friends, family, or guests, without disclosing that they’re made with lentils. I feel the same way about hummus that I do about pizza and chicken salad. That is, one can never have too many recipes for these dishes because no matter what variation you make, the end result is almost always delicious with near universal appeal. I guess that’s why there are countless recipes for hummus floating around the internet and no matter how many new ones appear in the blogosphere, people seem to love them. So here’s another, but this one’s a little different. Za’atar Cashew Hummus is every bit as delicious as traditional hummus but it’s made with raw cashews and roasted red peppers instead of chickpeas, and it’s flavored with za’atar – an aromatic Middle Eastern spice with amazing savory flavor.
