Quiche Lorraine is a recipe I made on are regular basis when I first started cooking because it was easy and I could remember it without having to reference a cookbook or recipe card. This was way before the internet and way before I had amassed any serious cooking equipment. In my tiny studio apartment, all I had was one mixing bowl, some very basic utensils, and an old gas oven, but with a frozen pie crust and a few simple ingredients I turned out quiche after quiche. My trick for remembering how to make it was simple – I recalled the number 3. The quiche custard consisted of 3 main ingredients: eggs, light cream, and cheese. As for how much of each of these ingredients, again, the number 3 helped me remember that the recipe called for 3 eggs, 3 half cups (1½ cups) of light cream, and 3 half cups (1½ cups) of cheese. After that, it was just a matter throwing in some meats or veggies and seasonings. To this day, there are very few dishes as delicious as this one that I can remember by heart which is why I thought it was high time for me to do a blog post. This recipe for Classic Quiche with a Chickpea Flour Crust is the updated version of my old favorite and replaces a store-bought, frozen pie crust with a delicious, gluten-free crust made from chickpea flour, also known as garbanzo flour or gram flour. It requires more effort to make than using a frozen crust (and might require you to actually refer to the recipe) but it’s much healthier and pairs amazingly well with the savory flavors in the quiche custard. It’s universally accepted that the best method for cooking hamburgers is grilling, but for those occasions when grilling is not possible, you can still have perfectly cooked burgers by using the same oven roasting technique I employ when I make these delicious Oven Roasted Gorgonzola Wild Rice Hamburgers. Oven roasting is hassle-free and results in burgers that are more juicy than ones cooked on the grill because with oven roasting, none of the juices are pressed out with a spatula the way they typically are with grilled burgers. Although the cooking method used in this recipe is a little unorthodox, it’s the burgers themselves that really stand out. Anyone who has a sweet tooth knows that when cravings strike, they’re hard to ignore. Even those of us who aren’t “addicted to sugar” won’t pass up a sweet treat every now and then. I find salmon almost as versatile to cook as chicken so I make it quite often. My usual preparation is roasting it simply, with olive oil, salt and pepper, and a sprinkling of Herbs de Provence, or, if I’m in the mood for something with more robust flavor, I’ll spread some homemade pesto on top before roasting. Lately I’ve gotten a little bored with these dishes and decided it was time for something new. Quick breads are no-yeast breads that can be made in a wide variety of sweet and savory flavors. These easy-to-make loaves are not only super-fast to make, as the name implies, but are a lot less finicky than bread made with yeast because you don’t need to be concerned about proofing the yeast (a process whereby you test the yeast ahead of time to make sure it’s active/alive) or whether you have the right climate for your bread to rise properly. Banana bread is by far the most popular in the quick bread category but most recipes you’ll come across call for all-purpose flour and refined sugar.
