I went to Baltimore recently for a family event and dined on the most mouth-watering crab cakes. They were so delicious that when I got home I was inspired to develop a crab cake recipe.  I knew mine had to be a little different though, after all, there are a million recipes for crab cakes floating around the internet – no sense adding one more to the mix unless it offers something unique. Since just about every recipe for crab cakes calls for eggs and/or breadcrumbs as a binder, I thought it would be interesting to create a recipe that didn’t use either of these ingredients. After racking my brain for a while, I came up with the idea of using cooked sushi rice as the magic ingredient to bind everything together.  Sushi Rice Crab Cakes with Egg-Free Avocado Lemon Aioli turned out even better than I expected! It might seem counterintuitive, but one of the best way to maintain good eating habits is to enjoy a healthy treat each day. Following this rule has really worked for me because like a lot of people, I have a bit of a sweet tooth, and if I don’t satisfy my craving, I just end up feeling deprived, which makes me much less likely to eat healthfully over the long term. So I allow myself a little something sweet after lunch or dinner, as long as it’s made with healthy, wholesome ingredients and minimally processed. One of my favorite healthy treats are these Peanut Butter Cookie Flax Bars. I have one almost every day. In fact, my whole family is addicted to these bars. They taste like candy, but unlike candy, they keep you feeling full for a long time because they have a decent amount of protein, and are high in healthy fats. (more…)

One of the easiest ways to improve our diets is to replace recipes that call for all-purpose flour with ones that call for whole grain flours. Many people need to make this switch because of food allergies, and others simply want to eat more healthfully. Fortunately, food companies large and small have answered the demand and are now producing whole grain flours that were once considered esoteric. Quinoa flour is one such flour and my grocery store just started carrying it so I couldn’t resist grabbing a bag and with it, I made gluten-free Cranberry Orange Quinoa Zucchini Muffins. These seasonal muffins are flavored with winter fruit and spice and are really delicious!

Many Italian Americans celebrate Christmas Eve with a gigantic meal featuring seven different kinds of seafood. This is known as the Feast of Seven Fishes. It’s a Roman Catholic tradition connected to the custom of abstaining from meat on Christmas Eve and was likely started right here in the United States by Italian immigrants back in the early 1900’s as a way to honor their heritage. Even though both my husband and I have some Italian blood, we don’t celebrate with the wide variety of seafood that is typical of many of these feasts. Instead, our family’s simple way to keep this tradition alive is by having shrimp for dinner on Christmas Eve. In the past I’ve always made classic shrimp scampi, but this year I’m serving Dump and Bake Parmesan Shrimp and Vegetable Casserole. Despite its name, this is an elegant dish that can be scaled up to feed a crowd and is so easy to make that the recipe instructions can be summed up in one sentence: dump all ingredients into a casserole dish, stir, and bake at 400 for 20 minutes. Appetizers and hors d’oeuvres are the stars of any holiday party. Demand for Brussels sprouts has increased dramatically over the past decade. Some people attribute this to restaurant chefs who, several years ago, began pairing roasted Brussels sprouts with bacon – a trend that led consumers to develop a newfound appreciation for this old-fashioned, and often reviled, winter vegetable. I admit I was one of those patrons who was once unenthusiastic about Brussels sprouts but declared myself a fan after tasting them with bacon at a restaurant. Let’s face it, cooking and serving Thanksgiving dinner is an ordeal. Even if your guests pitch in by bringing food and helping with the cleanup, it’s still a ton of work. These gluten-free, egg-free Almond Oat Cups are a cross between a cookie and a muffin, and even though they’re perfect for teatime, because they’re dainty and not too sweet (each cup has only 4 grams of sugar), they’d also be fantastic for dessert. Just imagine some fresh berries or baked apples on top, along with a scoop of vanilla ice cream – yum! One of the best things about these healthy little treats is that they only take 10 minutes to bake – the prep time is pretty quick too, 15 minutes max. I use a standard 12-cup muffin pan to make “cups” but if you don’t own a muffin pan you can also use an 8 x 8-inch square pan and make “bars” instead. Simply line the pan with parchment paper and press the mixture evenly into the pan. Once it’s finished baking, let it cool completely and then cut it into bars or squares. (more…)

The rise of cauliflower as a celebrity vegetable has been nothing short of meteoric. Much of this growth can be attributed to cauliflower rice, a term used to describe cauliflower that has been chopped into tiny pieces that resemble grains of rice. So staggering is the growth of this vegetable in disguise that huge, multinational brands are now jumping in to capture market share. Green Giant (a division of General Mills) now harvests over 100,000 heads of cauliflower daily to meet the growing demand – a six-fold increase from just a few years ago! I’ve done my part as a food blogger by posting a variety of new-fangled cauliflower-based dishes (see the last paragraph for links to these recipes), but recently I had the urge to go back to using cauliflower in a more traditional way and came up with this recipe for Roasted Cauliflower with Feta, Tomatoes, Walnuts, and Capers.
