I find salmon almost as versatile to cook as chicken so I make it quite often. My usual preparation is roasting it simply, with olive oil, salt and pepper, and a sprinkling of Herbs de Provence, or, if I’m in the mood for something with more robust flavor, I’ll spread some homemade pesto on top before roasting. Lately I’ve gotten a little bored with these dishes and decided it was time for something new. Pistachio crusted recipes are popular right now so I decided to come up with one of these toppings for salmon. After doing a little research I learned that apricots pair well with pistachios, so I mixed up a traditional pistachio topping and threw in some apricot jam to create this easy and elegant salmon dish. Apricot Pistachio Crusted Salmon has incredible savory flavor with just a hint of sweet and tart from the apricots and lemon. I consider crackers a pantry staple but I’m not crazy about most of the choices at the grocery store as many of them contain not-so-healthy ingredients like refined oils, potato starch, and added sugars. That’s why, when I have time, I prefer to make my own and this recipe for Chickpea Parmesan Crackers is probably the one I turn to most. These are hearty, rustic crackers with a firm bite and delicious savory flavor. They’re beautiful on charcuterie boards, taste divine dipped in hummus, and, when broken apart are a fantastic gluten-free substitute for salad croutons. I’m not gonna lie – they’re a little labor intensive to make but are definitely worth the effort!  So, make yourself a cup of tea, put on some music or a podcast, and get to work making these scrumptious crackers. If you’re not accustomed to eating sweet potatoes cold or at room temperature, you’re missing out because they’re fantastic in salads and add a gorgeous pop of color, particularly when set against salad greens. They’re super nutritious too, rich in beta-carotene, potassium, manganese, and lots of other vitamins and minerals. Whenever I make Roasted Maple Balsamic Onions it’s almost always as an accompaniment to grilled beef or pork, but I invariably end up using them “in” and “on” so many other foods. This bread is so delicious and addictive that my husband jokingly calls it “crack”, which is ironic because the first iteration of Gluten-Free Cheesy Ruffle Bread almost ended up in the trash. I was actually trying to develop a pizza crust when I came up with this recipe, but when I pulled the pan out of the oven the so-called “crust” was a bubbly, ruffled mess – not at all suitable for pizza toppings. If it weren’t for the fact that I’m maniacal about food waste I might have tossed it in the garbage, but I figured it was probably edible so I cut it into pieces and served it with dinner that night and much to my surprise, everyone loved it, and I mean REALLY loved it! If I hadn’t already known that one could make delicious tasting brownies with foods like black beans, sweet potatoes, and avocados, I might have been skeptical when I first heard about lentil brownies. After all, lentils are one of the most nutritious foods on the planet. Who would ever think you could use them to make rich and decadent desserts?  But now that I’ve been a food blogger for a few years, I’m quite familiar with how healthy foods can be disguised in baked goods and the magic that happens when, in combination with other nutritious ingredients, they’re transformed into delicious treats – ones far better for us than their classic counterparts. If you don’t believe me, try this little experiment. Whip up a batch of Dark Chocolate Lentil Brownies and serve them to your friends, family, or guests, without disclosing that they’re made with lentils.
