Kefir Avocado Basil Dressing – A light, creamy, delicious dressing infused with fresh basil and chock-full of probiotics. Use it as a salad dressing, dipping sauce or sandwich spread. | QueenofMyKitchen.com #probiotics #kefir #healthyrecipe #healthyeating

Probiotics are a hot topic nowadays as more and more people learn about the growing body of research that points to a link between gut bacteria and overall health. Probiotics are the live bacteria and yeasts found in certain foods. They’re sometime referred to as “good bacteria”. Probiotics contribute to a healthy digestive tract and seem to reduce inflammation, a risk factor in a number of illness and diseases. Some researchers also believe that they help burn fat and stabilize blood sugar. Fortunately, it’s easy and tasty to incorporate probiotics into your diet and one of the ways you can do it is by making this Kefir Avocado Basil Dressing. (more…)

You’ll definitely want to serve it with something that you can use to mop up all of the delicious sauce. I recommend Lemon Rice or some crusty French bread. (more…)

Crisp Rice Apple Crumble

Crisp Rice Apple Crumble – A lighter, cleaner version of classic apple crisp made with crispy brown rice cereal. Gluten-free. #applecrisp #applecrisprecipe #glutenfreerecipe #glutenfreedessert #applecrumble | QueenofMyKitchen.com

Crisp Rice Apple Crumble is a gluten-free version of apple crisp made with crispy brown rice cereal.  Unlike traditional apple crisp, this delicious dessert actually contains a “crispy” ingredient! There’s no wheat flour in this recipe, but there are oats so if you adhere to a strictly gluten-free diet be sure to use gluten-free oats. Many people are confused about whether or not oats are gluten-free. The confusion arises because while oats are not a gluten containing grain, they are usually processed along with wheat, rye, and barley, and, as a result, are cross contaminated with gluten. Therefore, if you have celiac disease or any type of gluten intolerance, it’s best to avoid oats that are not certified gluten-free. (more…)

Grilled Pork Chops with Rosemary Pumpkin Butter – Pork loin chops are brined, grilled, and topped with a delicious sauce infused with classic fall flavors. No more boring pork! | QueenofMyKitchen.com

Even though fall has officially arrived, we’ve had temps in the 90’s this week here in New England. Mother nature somehow isn’t seeing all the advertisements for pumpkin spiced lattes and apple cider donuts, and has ignored the fact that the leaves are starting to change. So, until she catches up I plan to keep my outdoor grill going. What do you make for dinner when the calendar says autumn but the thermometer says summer? How about these delicious Grilled Pork Chops with Rosemary Pumpkin Butter! (more…)

Basil Cheddar Quinoa Meatballs Sheet Pan Meal with Baby Potatoes and Roasted Bell Peppers - Baby potatoes are the rack for savory meatballs in this unique sheet pan meal. Sweet roasted bell peppers are the perfect complement to this intensely flavored dish. | QueenofMyKitchen.com

Sheet pan meals are all the rage these days, and for good reasons. A well-balanced family meal consisting of a protein, vegetable, and starch, usually involves using not only multiple pots and pans for cooking, but more than one appliance. The idea that you can cook your entire dinner on one pan, using only the oven, is so appealing. Not only is clean-up easier, but there are no issues with timing because all the food is prepped and cooked simultaneously. This makes sheet pan meals ideal for busy families. However, the obvious challenge with sheet pan meals is that you must choose foods that have similar cooking times. This makes your choice of protein, veggie, and starch tricky and it can take a little bit of experimenting to get the right combination of foods for a successful sheet pan meal. My Basil Cheddar Quinoa Meatballs Sheet Pan Meal with Peppers and Potatoes contains foods that work really well together for a sheet pan meal. The meatballs take about 20 minutes to fully cook and the baby potatoes about the same. If the potatoes are on the larger side, they might take a few minutes longer, but that’s ok because the meatballs and peppers are a bit forgiving with their cooking times – meaning that if they cook a few minutes longer than needed, they will still taste great. Chickpea Cheddar Tots

Chickpea Cheddar Tots – There’s a new tot on the block! Nuggets of cheddar cheese encased in a gluten-free chickpea crust and baked to golden perfection. Served with mustard, these tots make a great, healthy snack for kids and adults. | QueenofMyKitchen.com

Tater tots – those small, cylindrical pieces of grated, fried potatoes – they’re almost as American as apple pie. In fact, tater tots are so well-known that many people don’t realize the term is actually trademarked by the Ore-Ida potato company, which is owned by Kraft. As with any foods that have a cult-like following, there are copiers, and in the healthy food blogging space these knock-offs include broccoli tots, cauliflower tots, zucchini tots, and sweet potato tots. But there’s a new tot on the block now.  Allow me to introduce you to Chickpea Cheddar Tots! Nuggets of cheddar cheese are encased in chickpea flour dough, shaped into tots, and baked to golden perfection. Chickpea Cheddar Tots make a great, healthy, after-school snack for kids, and adults love them too, especially when served with cold beer! (more…)

Low Sugar Gingerbread Cranberry Sauce with Printable Labels

Low Sugar Gingerbread Cranberry Sauce (with printable labels) – A healthier cranberry sauce for the holidays with classic gingerbread taste. Great with turkey but can also be used as a dessert sauce or appetizer ingredient. Makes a great homemade holiday gift. #AD | QueenofMyKitchen.com

I know it’s a little early to starting thinking about the holidays, but several years ago I developed a habit that has served me well. I start a list right after Labor Day with gift ideas for everyone in my family, and jot down some possible menu options for Thanksgiving and Christmas. I usually don’t do any shopping until after Halloween, but making a list and some notes way ahead of time helps keep me organized so that when that panicky – oh no, the holidays are right around the corner – feeling strikes, I’m a little less stressed out. This year I got a head start thanks to the SPLENDA® Sweeteners Recipe Redux Sponsored Contest. I was initially stumped at what to make for this contest, but as luck would have it, one day I opened my spare freezer and there, staring me right in the face, were two bags of fresh/frozen cranberries with a “best by” date of December 2017. This was my cue to do a healthy remake of traditional cranberry sauce. This Low Sugar Gingerbread Cranberry Sauce is not only yummy, with substantially less sugar than store-bought cranberry sauce, but is hands-down the easiest cranberry sauce you’ll ever make. I plan to give it away as a gift to all those miscellaneous, but important people in my life that I like to thank or acknowledge during the holidays. (I’ve provided printable labels and links to some of the supplies at the end of this post if you’d like to do the same.) (more…)

Vegan Flax Candied Nuts

Vegan candied nuts with a multitude of delicious uses.  Gluten free and dairy free with no refined sugar.

Vegan Flax Candied Nuts – Deliciously addictive candied nuts. Gluten free and dairy free with no refined sugar. Eat them alone as a healthy snack, sprinkle some on salads or mixed them into yogurt. They make a great holiday or hostess gift too. | QueenofMyKitchen.com

WARNING – Vegan Flax Candied Nuts are dangerously addictive! Once you start popping them into your mouth you may not be able to stop!  The coating on these nuts, which produces a sweet glaze when baked, is made from a simple mixture of coconut sugar and cinnamon that binds to the nuts with the help of a flax egg replacer, which is nothing more than ground flax seeds (sometimes called ground flax meal) mixed with water. If you adhere to a plant-based diet you’re probably very familiar with flax egg replacers as they are an excellent vegan substitute for eggs. (more…)

Chickpea Cheddar Kefir Biscuits

Kefir takes the place of buttermilk in these savory, gluten-free biscuits made with nutrient dense chickpea flour.

Chickpea Cheddar Kefir Biscuits – Kefir takes the place of buttermilk in these savory, gluten-free biscuits made with nutrient dense chickpea flour. Healthy and delicious comfort food. | QueenofMyKitchen.com

I’ve been experimenting a lot lately with chickpea flour and Chickpea Cheddar Kefir Biscuits are my most recent creation. (Check out Chickpea Pretzels too.) I was initially drawn to chickpea flour as a gluten-free alternative to wheat flour but have come to love it for many others reasons. It’s easy to use and can be successfully substituted for all-purpose wheat flour in a wide variety of recipes, without the addition of other gluten-free flours, starches or gums. It’s also inexpensive and easy to make at home by grinding garbanzo beans into a fine powder – easily achieved with the help of a food processor or high-powered blender. But the best reason of all to use chickpea flour is that it is one of the most nutrient dense gluten-free flours available. It’s high in protein and fiber, and packed with vitamins and minerals. These Chickpea Cheddar Kefir Biscuits have twice the protein and fiber as the same size biscuit made with wheat flour. (more…)
