Fig Prosciutto Mascarpone Sweet Potato Crackers
Serves: 6 servings
  • 12 Breton Artisanal Sweet Potato and Ancient Grains crackers
  • 3 tablespoons mascarpone cheese
  • 3 tablespoons fig jam or preserves
  • 1 slice (1/2 ounce) thinly sliced prosciutto
  • 1 sprig of fresh rosemary
  1. Make crispy prosciutto. Preheat oven to 350 degrees. Place the prosciutto slice on a parchment or silicone lined baking sheet. Bake until browned and crispy, about 15-20 minutes. Let cool and then break into small pieces and set aside.
  2. Spread each cracker with a heaping ½ teaspoon of mascarpone cheese and top with a heaping ½ teaspoon of fig preserves. Sprinkle on some crispy prosciutto pieces. Garnish with rosemary leaves.
  3. Repeat with remaining crackers.
