Vegan Flax Candied Nuts
Serves: 19 servings
  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • ½ cup coconut sugar
  • 1 tablespoon cinnamon
  • ¼ teaspoon salt
  • 1 lb. nuts roughly chopped (I like a combination of almonds, pecans, and walnuts)
  • 1 teaspoon vanilla
  1. Preheat the oven to 300 degrees.
  2. Combine the ground flaxseed and water in a small bowl (stir with a fork). Set aside for 10 minutes.
  3. Combine the coconut sugar, cinnamon, and salt in another small bowl.
  4. Place the nuts in a medium size bowl and add the vanilla and the flax mixture. Stir to completely coat the nuts. Pour in the coconut sugar mixture and toss to coat all the nuts with the mixture.
  5. Spread the nuts out on a parchment or silicone lined baking sheet and bake on the bottom rack of the oven for 25 minutes. Let cool completely before breaking apart into small pieces
