Dark Chocolate Avocado Banana Brownies
Serves: 16 (1 ounce) brownies
  • Olive oil or coconut oil cooking spray
  • 1 cup (3 ounces) cacao powder (see notes)
  • ½ cup (3 ounces) coconut sugar
  • 1 medium avocado, 4½ ounces with the peel and pit removed
  • 1 medium banana, 3½ ounces without peel
  • 3 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  1. Preheat the oven to 350 degrees and spray an 8-inch x 8-inch baking pan with cooking spray.
  2. Place the remaining ingredients into the work bowl of a food processor and process until smooth.
  3. Transfer the batter to the prepared pan and bake on the bottom rack of the oven for 20 minutes, until a toothpick inserted into the center comes out clean.
  4. Let cool completely before cutting into squares.
Use cacao powder NOT cocoa powder. You can substitute cocoa powder but the brownies will not have the same intense dark chocolate flavor.
