Kefir Flatbreads
Serves: 8 flatbreads
  • 1¼ cups (185 grams) + 2 teaspoons Bob’s Red Mill Gluten Free 1 to 1 Baking Flour (see notes)
  • ½ cup unsweetened whole milk kefir
  • 1 egg
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  1. Preheat oven to 400 degrees and line a half sheet pan with parchment paper.
  2. Mix 1¼ cups of the flour, along with the remaining ingredients, until a soft, smooth dough forms.
  3. Dust a surface with some of the extra flour and roll out the dough to a thickness of ¼ inch.
  4. Using a 4 x 4-inch cookie cutter, stamp out 8 flatbreads and place them, evenly spaced, on the baking sheet.
  5. Bake on the bottom rack of the oven for 10 minutes, then flip over and bake another 10 minutes.
This recipe only works with Bob’s Red Mill Gluten Free 1 to 1 Baking Flour. You may not have good results with a different gluten-free flour blend.
