Broccoli Bread Slices
Serves: 4 Broccoli Bread Slices
  • Olive oil cooking spray
  • 1-pound bag of frozen broccoli florets
  • ½ cup gluten-free bread crumbs
  • ¼ cup finely grated Parmesan cheese
  • 1 egg
  • ¼ teaspoon garlic powder
  • ¼ teaspoon pepper
  1. Preheat oven to 425 degrees. Line an 8 x 8-inch square pan with parchment paper and spray lightly with olive oil cooking spray.
  2. Cook broccoli according to the package directions. Let cool for a few minutes and then transfer it to the work bowl of a food processor. Process until the broccoli is in small pieces and almost mushy.
  3. Using a slotted spoon, transfer the mixture onto a thin clean dish towel (such as a flour sack towel), or a piece of cheesecloth, and twist it tightly into a ball to wring out all the water. You can also use a nut milk bag if you have one.
  4. Transfer the broccoli to a large bowl and add the bread crumbs, cheese, egg, garlic powder, and pepper. Mix well.
  5. Press the broccoli mixture evenly into the pan (wet you fingers to prevent sticking or use a piece of plastic wrap) and score it down the middle of each side to form 4 squares.
  6. Bake on the bottom rack of the oven for 20 minutes. Let cool for 10 minutes then remove from the pan and cut into 4 bread slices.
If not using right away refrigerate for up to 2 days or freeze. Reheat in a toaster oven or a 400-degree oven for 5-7 minutes.
