Sweet and Spicy Chile Lime Popcorn
Serves: 2 servings
  • ¼ cup popcorn kernels
  • 1 tablespoon Chile Lime Seasoning Blend (Trader Joe’s)
  • 1 tablespoon coconut sugar
  • 2 tablespoons butter, melted
  • Zest of 1 lime and lime wedges (optional)
  1. Place the kernels in a large microwave safe bowl and cover with a microwave safe top or plate. Microwave on high until the popping slows down to about 4-5 seconds in between pops. Alternatively, use a hot air popper.
  2. Combine the Chile Lime Seasoning and coconut sugar in a small bowl.
  3. Push the popcorn off to the side of the bowl and drizzle the melted butter into the bottom of the bowl. Toss thoroughly to coat the popcorn with the butter and sprinkle on the Chile Lime Seasoning. Toss again until the seasoning coats all the popcorn. Sprinkle on the lime zest, if using, and mix again.
  4. Serve with lime wedges if desired.
