Lemony White Beans with Garlic and Rosemary - A healthy and delicious Tuscan inspired side dish you can make in under 10 minutes. Serve it as an appetizer, light meal, or side dish. Vegan, gluten-free, and dairy-free.

Serves: 4 servings
  • ¼ cup olive oil
  • Zest and juice of 1 lemon
  • 1 tablespoon sherry vinegar
  • 1 large garlic clove, minced
  • 1-15½ can white (cannellini) beans, rinsed and drained
  • 1 tablespoon fresh chopped rosemary (or 1 teaspoon dried)
  • Salt and pepper to taste
  1. In a medium bowl, whisk together the olive oil, lemon juice, vinegar, and garlic.
  2. Add the beans, zest, and fresh rosemary. Toss to combine all the ingredients.
  3. Season with salt and pepper to taste.
I used beans with added salt in this recipe, however, since the beans were rinsed and drained most of the salt was removed. Therefore the sodium content is actually much lower than what is listed below.
