Blue Cheese Greek Yogurt Avocado Dressing

- ½ cup (2 ounces) blue cheese
- 5 ounces avocado, from a medium avocado (see notes)
- ¼ cup (57 grams) plain, full-fat, Greek yogurt
- 2 tablespoons white balsamic vinegar
- 1 clove of garlic
- 1 tablespoon Herbs de Provence or other savory seasoning
- ½ teaspoon maple syrup
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Combine all ingredients in the work bowl of a food processor and process until smooth.
An avocado weighing about 7 ounces (with peel and pit still on) will yield about 5 ounces of avocado.
