Garlic Parmesan Carrot Fries with Za’atar Mayonnaise

Carrots are cut into the shape of fries and roasted with garlic and Parmesan cheese until crisp and golden, then served with a delicous middle eastern spiced mayonnaise.

Ingredients
  • 2 pounds carrots, peeled, ends trimmed off, and cut into fries about ¼ inch thick
  • 2 tablespoons oil
  • ½ cup finely grated Parmesan cheese
  • ¼ cup fresh chopped parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 egg (52 grams)
  • ¼ cup olive oil
  • ¼ cup avocado oil
  • 1 teaspoon Za’atar seasoning
  • ½ teaspoon salt
Instructions
  1. Preheat oven to 400 degrees and line two sheet pans with parchment paper.
  2. Add the carrots to a mixing bowl and drizzle the olive oil on top. Stir until the carrots are well coated.
  3. Combine the Parmesan, parsley, garlic powder, salt, and pepper in a small bowl and pour the mixture over the carrots. Stir thoroughly so the Parmesan mixture coats the carrots.
  4. Divide the carrots between the sheet pans and bake for 15-20 rotating the baking sheets halfway through the baking time.
  5. While the carrots are roasting make the za’atar mayonnaise.
  6. Combine the remaining ingredients in the beaker that came with your immersion blender (stick blender) and blend until thick and creamy.
  7. Serve the carrot fries warm with Za’atar mayonnaise.
