Gluten-Free Orange Almond Cake

If you're into clean eating, this is a quick and easy gluten-free cake you can make with ingredients you probably already have on hand.

  • Olive oil cooking spray
  • 1 cup (5 ounces) almond flour
  • ¼ cup (1½ ounces) coconut sugar
  • ¼ cup (37 grams) gluten-free flour (see notes #1)
  • ½ teaspoon baking powder
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 3 eggs
  • 2 tablespoons maple syrup
  • ¼ cup butter, melted
  • 1 can mandarin oranges (10 or 11 ounces), drained
  • ¼ cup (1 ounce) raw, sliced almonds
  1. Preheat the oven to 375 degrees and spray a 9-inch spring form pan (with removable bottom) with cooking spray.
  2. In a mixing bowl whisk together the almond flour, coconut sugar, gluten-free flour, baking powder, cinnamon, and salt. Stir in the eggs and maple syrup. Drizzle in the melted butter in a slow steady stream and combine all the ingredients thoroughly.
  3. Pour batter into pan and arrange the sliced almonds and mandarin oranges decoratively on top.
  4. Bake on the bottom rack of the oven for 20-25 minutes until golden brown.
  5. Cool before cutting.
I used Bob’s Red Mill Gluten Free 1 to 1 Baking Flour for this recipe. Since the flour combinations in gluten-free baking mixes vary from manufacturer to manufacturer you may have different results with another brand.
