Lemon Rice
Serves: 4 servings
  • 4 tablespoons (1/2 stick) butter
  • 1 clove garlic, minced
  • 3 cups cooked rice (cook according to package directions)
  • Juice of 2 small lemons
  • Zest of 1 lemon
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 lemon, quartered
  1. Heat the butter over medium-high heat in a large skillet and sautée the garlic for 30 seconds.
  2. Spoon in the cooked rice. Add the lemon juice, lemon zest (set some aside for garnish if desired), salt, and pepper.
  3. Toss and stir everything until it is well combined and the rice is heated through, about 3-5 minutes.
  4. Garnish with lemon zest and serve with lemon quarters.
