Do you eat enough vegetables? Even if you’re a relatively healthy eater the answer might be “no”. In 2010 the Centers for Disease Control and Prevention (CDC) reported that only 27% of adults were eating the recommended daily amount of vegetables. The problem is, vegetables can get a little boring. Raw veggies are great but many of us fall back on plain steamed or roasted vegetables at dinnertime – not very exciting. I readily admit there’ve been plenty of nights I’ve skipped making a vegetable because I was too tired and even a simple roasted or sautéed veggie just didn’t seem worth the effort. One thing that might help all of us get the nutrients we need from vegetables every day is to prepare them in interesting and delicious ways as often as possible, like, for example, making fries out of carrots and serving them with a middle eastern spiced dipping sauce as I’ve done here with this recipe for Garlic Parmesan Carrot Fries with Za’atar Mayonnaise. These fries will turn even the most die-hard carrot haters into fans. Believe me, nobody will be skipping their daily veggies when these are on the menu!
Garlic Parmesan Carrot Fries with Za’atar Mayonnaise can be on the dinner table in under 30 minutes. The only real work involved in making these healthy, delicious fries is cutting the carrots. The Za’atar mayonnaise can be whipped up in just a few minutes using a food processor or an immersion blender but if you’re short on time just skip making the mayonnaise. The fries won’t taste quite as indulgent without it but they’ll still be delicious.
In case you’re not familiar with Za’atar, it’s an earthy, aromatic middle eastern spice blend that can be used in a wide variety of recipes and has become quite trendy lately. Most often it’s a combination of dried herbs such as sumac, sesame seeds, thyme, and marjoram, but you might also find blends that contain other herbs such as oregano and cumin. The exact blend of herbs will vary depending on the manufacturer and you can also make your own with a recipe like this one.
I love the look of these Garlic Parmesan Carrot Fries with Za’atar Mayonnaise on a plate. For someone who leans toward green veggies, a pop of orange color is a welcome change. - 2 pounds carrots, peeled, ends trimmed off, and cut into fries about ¼ inch thick
- 2 tablespoons oil
- ½ cup finely grated Parmesan cheese
- ¼ cup fresh chopped parsley
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 egg (52 grams)
- ¼ cup olive oil
- ¼ cup avocado oil
- 1 teaspoon Za’atar seasoning
- ½ teaspoon salt
- Preheat oven to 400 degrees and line two sheet pans with parchment paper.
- Add the carrots to a mixing bowl and drizzle the olive oil on top. Stir until the carrots are well coated.
- Combine the Parmesan, parsley, garlic powder, salt, and pepper in a small bowl and pour the mixture over the carrots. Stir thoroughly so the Parmesan mixture coats the carrots.
- Divide the carrots between the sheet pans and bake for 15-20 rotating the baking sheets halfway through the baking time.
- While the carrots are roasting make the za’atar mayonnaise.
- Combine the remaining ingredients in the beaker that came with your immersion blender (stick blender) and blend until thick and creamy.
- Serve the carrot fries warm with Za’atar mayonnaise.
