Crisp Rice Apple Crumble is a gluten-free version of apple crisp made with crispy brown rice cereal. Unlike traditional apple crisp, this delicious dessert actually contains a “crispy” ingredient! There’s no wheat flour in this recipe, but there are oats so if you adhere to a strictly gluten-free diet be sure to use gluten-free oats. Many people are confused about whether or not oats are gluten-free. The confusion arises because while oats are not a gluten containing grain, they are usually processed along with wheat, rye, and barley, and, as a result, are cross contaminated with gluten. Sheet pan meals are all the rage these days, and for good reasons. A well-balanced family meal consisting of a protein, vegetable, and starch, usually involves using not only multiple pots and pans for cooking, but more than one appliance. The idea that you can cook your entire dinner on one pan, using only the oven, is so appealing. Not only is clean-up easier, but there are no issues with timing because all the food is prepped and cooked simultaneously. This makes sheet pan meals ideal for busy families. However, the obvious challenge with sheet pan meals is that you must choose foods that have similar cooking times. This makes your choice of protein, veggie, and starch tricky and it can take a little bit of experimenting to get the right combination of foods for a successful sheet pan meal. My Basil Cheddar Quinoa Meatballs Sheet Pan Meal with Peppers and Potatoes contains foods that work really well together for a sheet pan meal. The meatballs take about 20 minutes to fully cook and the baby potatoes about the same. If the potatoes are on the larger side, they might take a few minutes longer, but that’s ok because the meatballs and peppers are a bit forgiving with their cooking times – meaning that if they cook a few minutes longer than needed, they will still taste great. Tater tots – those small, cylindrical pieces of grated, fried potatoes – they’re almost as American as apple pie. In fact, tater tots are so well-known that many people don’t realize the term is actually trademarked by the Ore-Ida potato company, which is owned by Kraft. As with any foods that have a cult-like following, there are copiers, and in the healthy food blogging space these knock-offs include broccoli tots, cauliflower tots, zucchini tots, and sweet potato tots. But there’s a new tot on the block now. Allow me to introduce you to Chickpea Cheddar Tots! Nuggets of cheddar cheese are encased in chickpea flour dough, shaped into tots, and baked to golden perfection. ‘Tis the season for pumpkin recipes so I wouldn’t be doing my job as a food blogger unless I created a pumpkin themed recipe for fall. In the past I’ve posted appetizer and dessert recipes but this year I decided to develop a pumpkin sauce that can be used in seasonal pasta entrees. Pumpkin Sweet Potato Alfredo Sauce is not as heavy as a traditional Alfredo sauce, which is typically made with Parmesan cheese, butter and heavy cream. Parmesan cheese is still a mainstay ingredient here, but this sauce gets much of its luxurious taste and texture from a combination of pumpkin and sweet potatoes mixed with milk and vegetable stock. I know it’s a little early to starting thinking about the holidays, but several years ago I developed a habit that has served me well. I start a list right after Labor Day with gift ideas for everyone in my family, and jot down some possible menu options for Thanksgiving and Christmas. I usually don’t do any shopping until after Halloween, but making a list and some notes way ahead of time helps keep me organized so that when that panicky – oh no, the holidays are right around the corner – feeling strikes, I’m a little less stressed out. WARNING – Vegan Flax Candied Nuts are dangerously addictive! Once you start popping them into your mouth you may not be able to stop! The coating on these nuts, which produces a sweet glaze when baked, is made from a simple mixture of coconut sugar and cinnamon that binds to the nuts with the help of a flax egg replacer, which is nothing more than ground flax seeds (sometimes called ground flax meal) mixed with water. If you adhere to a plant-based diet you’re probably very familiar with flax egg replacers as they are an excellent vegan substitute for eggs. (more…)
