Nothing says “weekend breakfast” like a stack of homemade pancakes. If you’re making pancakes from scratch though, it can be a bit of an ordeal as you’ll likely have to combine several ingredients, melt butter, sift flour etc. It’s definitely worth the effort on the taste front, but, if you’re like me, you might not like that heavy, laden feeling you’re left with after you eat waaaaay too many pancakes. Traditional pancakes are so light and fluffy and it’s easy to overindulge. Don’t get me wrong – I’m a big believer in the occasional overindulgence, but not in the month of January because most people are trying to eat healthier in the new year and lose any extra pounds they gained over the holidays! Apricot Orange Marinade is my go-to marinade for chicken and pork. This recipe makes enough for about 2 pounds of meat and you can even reserve a little bit of the marinade to use as a sauce for extra flavor. However, it’s very important to set aside any sauce you plan to serve with the cooked meat BEFORE you place the raw meat in the marinade, otherwise you risk contracting a foodborne illness, as raw meat can contain harmful bacteria that will contaminate the marinade. No worries consuming the meat after it’s properly cooked though, as any germs will be killed off. Just be sure to discard the marinade that the raw meat sat in.

Nothing gets me into the holiday spirit more than making gingerbread cookies. This year I updated my old recipe, one I’ve been using for many years, and came up with Coconut Oil Gingerbread Men. These cookies have a soft texture and classic gingerbread flavor and are so much fun to decorate. My old gingerbread men recipe calls for vegetable shortening, and in the past I used Crisco to make these cookies, but I no longer use partially hydrogenated fats (also known as trans fats) because they’ve been linked to inflammation and heart disease. A great replacement for products like Crisco is coconut oil and it can be used 1:1 so it’s an easy substitute. (more…)

It’s universally accepted that the best method for cooking hamburgers is grilling, but for those occasions when grilling is not possible, you can still have perfectly cooked burgers by using the same oven roasting technique I employ when I make these delicious Oven Roasted Gorgonzola Wild Rice Hamburgers. Oven roasting is hassle-free and results in burgers that are more juicy than ones cooked on the grill because with oven roasting, none of the juices are pressed out with a spatula the way they typically are with grilled burgers. Although the cooking method used in this recipe is a little unorthodox, it’s the burgers themselves that really stand out. Anyone who has a sweet tooth knows that when cravings strike, they’re hard to ignore. Even those of us who aren’t “addicted to sugar” won’t pass up a sweet treat every now and then. We can blame our yearning for sweet tasting foods on our early ancestors, who evolved to crave sugar because it was a good source of energy and protection from starvation. But the amounts and forms of sugar consumed back then were quite different than what’s readily available to us today, and this has led to over-consumption and, some would argue, contributed to the obesity crisis here in the U.S. So, what’s a sugar-loving person to do? In my opinion, the worst thing you can do is deprive yourself of sweets. Instead, look for ways to reduce your sugar consumption. Read nutrition labels carefully, and as much as possible, steer clear of foods with added sugars, especially refined and artificial sweeteners like high fructose corn syrup and aspartame. I find salmon almost as versatile to cook as chicken so I make it quite often. My usual preparation is roasting it simply, with olive oil, salt and pepper, and a sprinkling of Herbs de Provence, or, if I’m in the mood for something with more robust flavor, I’ll spread some homemade pesto on top before roasting. Lately I’ve gotten a little bored with these dishes and decided it was time for something new. Pistachio crusted recipes are popular right now so I decided to come up with one of these toppings for salmon. After doing a little research I learned that apricots pair well with pistachios, so I mixed up a traditional pistachio topping and threw in some apricot jam to create this easy and elegant salmon dish. Apricot Pistachio Crusted Salmon has incredible savory flavor with just a hint of sweet and tart from the apricots and lemon. Quick breads are no-yeast breads that can be made in a wide variety of sweet and savory flavors.
