CANNED FOOD DURING COVID-19
Visits to the grocery store during the age of COVID-19 have become a bit of an ordeal, so anything we can do to lengthen the time between shopping trips is smart and can lessen the amount of stress we experience during these very uncertain times. Early on in this pandemic I started stocking up on non-perishables (soup, beans, pasta, marinara, and canned fish) and as the crisis has dragged on, this strategy has paid off, and, oddly enough, given me a newfound appreciation for canned foods. One of the healthiest canned foods you can buy is wild caught sockeye salmon, which is what I used to make these 4-ingredient Super Simple Salmon Cakes.

CANNED SALMON VS. CANNED TUNA
Canned salmon is available at all mainstream grocery stores and is usually right next to the canned tuna. Tuna may still be the king of canned seafood, but there are compelling reasons you should buy canned salmon instead of tuna. Salmon contains less mercury than tuna and is at least as high, or higher, in omega-3’s. Salmon farming is also less harmful to the environment. For maximum health benefits, be sure to buy wild sockeye salmon that’s caught (usually in Alaskan waters) and canned in the U.S.

HOW TO SERVE SIMPLE SALMON CAKES
Super Simple Salmon Cakes are wonderful on top of salads and make a great appetizer. Mix some lemon juice into mayonnaise for an easy aioli/dipping sauce. This recipe calls for Trader Joe’s Everything but the Bagel Seasoning but you can substitute different seasonings if you don’t have this seasoning blend on hand. (See the recipe “notes” section.)

Super Simple Salmon Cakes
Ingredients
- 1 can (7.5 ounce) wild caught sockeye salmon
- 1 egg
- 2 teaspoons Trader Joe’s Everything but the Bagel Sesame Seasoning Blend (see notes)
- 2 teaspoons olive oil
Instructions
- Drain the salmon and dump it into a small bowl. Mash it with a fork and then add the egg and seasoning. Mix well.
- Form into 5 cakes (2 inches in diameter).
- Pan fry in olive oil over medium high heat in a non-stick skillet, 3-5 minutes per side, until golden brown.
