The holiday season is in full swing, replete with indulgences of all kinds, but let’s face it, when it comes to treats at Christmastime, it’s all about the cookies! Even the phrase itself – Christmas cookies – has a sort of sing-songy quality to it that conjures up feelings of happiness and nostalgia. Almost everyone has a favorite Christmas cookie, or one that they remember someone in their family making. A friend of mine once told me that his grandmother used to start baking right after Thanksgiving, and every year would make hundreds of cookies that she’d store in her freezer and then give away to just about everyone she knew on Christmas eve. What a wonderful memory! Old fashioned gingerbread cookies have always been a favorite in our house, but I’ve been seeing these cute reindeer cookies all over the place lately, so I decided to jump on the bandwagon and create a vegan Christmas cookie following this theme. This Peppermint Black Bean Brownie Wreath is a fun holiday dessert and not at all complicated to make. With all the super indulgent treats that surround us this time of year, it’s nice to offer one that is a tad healthier but still delicious and festive. If you haven’t tried black bean brownies yet you might be skeptical – I was too. All I can say is that it’s truly amazing how pureed black beans can be transformed into something that tastes like a chocolate truffle. Let’s not kid ourselves though, this is still a decadent dessert, and I’ve decorated it with peppermint candy canes and Twizzlers Twists so it’s definitely not health food! Having said that, you’ll be hard-pressed to find any dessert this good that contain 6 grams of fiber per serving, which is nearly ¼ of the recommended daily allowance (RDA) of fiber. (more…)

I love Christmas cookies decorated with royal icing but they’re an absolute pain to make.   You have to mix up several batches of icing for all the different colors you want, fit multiple pastry bags with tips, and then carefully fill each bag with icing.  All that before you even start decorating!  It’s very time consuming and the clean up is no fun either.  Raspberry Filled Christmas Tree Cookies are much less work but no less beautiful.  The idea for these cookies comes from the The New York Times. Their recipe calls for a linzer cookie dough but I opted for a classic sugar cookie dough because I thought the paler color of the dough would highlight the red raspberry jam better. Plus, I already had a batch of sugar cookie dough in my freezer just waiting to be transformed into Yuletide goodness! (more…)
