  • 5 cups (19 ounces) cooked, shredded chicken
  • 2 large celery stalks, chopped
  • 2 tablespoons fresh chopped parsley
  • 2 medium scallions, white and light green parts, finely chopped
  • 1/3 cup (4 ounces) dried cranberries or raisins
  • 1/2 cup (2 ounces) chopped walnuts
  • 1/4 cup avocado mayonnaise
  • 1/4 cup unsweetened, full-fat, Greek yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons curry powder
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


  • Place the chicken, celery, parsley, scallions, cranberries, and walnuts in a large bowl.
  • Whisk together the remaining ingredients and pour over the chicken mixture.
  • Stir until all the ingredients are well combined.
