Preheat the oven to 350 degrees and spray a loaf pan (measuring about 9 x 5 inches) with coconut oil spray.
In a large bowl whisk together the eggs, oil, vinegar, and syrup. Add the remaining ingredients and stir until everything is well combined.
Transfer the batter to the loaf pan and spread it out evenly.
Bake on the bottom rack of the oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
